This is a genuine rye starter in dehydrated form, not a live culture. Originating from Poland and re-born in Australia in 2014, it is maintained with organic whole rye flour from Wholegrain Milling. It has a thick, peanut-butter-like texture, a light brown colour, and a fruity, complex aroma with notes of ripe grapes, green apple, and mild sweet vinegar. Each batch is fermented for 48 hours, then gently dried in a low-temperature dehydrator, crushed, and ground into a fine powder. This gives the starter a long shelf life while retaining natural yeasts and lactic acid bacteria. Once rehydrated, it will be ready to use within 48–72 hours, though a few feedings may be needed to reach full activity. It works best for classic full-flavour sourdough, rustic loaves, baguettes, and whole-grain breads. Use 15 to 20 percent directly in your dough, or build a leaven for extra lift.
