ErstWhile - "Jabalí by Silverio García" Mezcal Ancetral Limmited Edition (375ml)

Only 100 liters of this rare Jabalí mezcal were produced, highlighting one of the most challenging and revered agave varietals in Oaxaca. Naturally high in saponins, Jabalí creates intense foaming throughout roasting, fermentation, and distillation, making it notoriously difficult and labor-intensive to work with. The yield is exceptionally low — nearly fifty-five pounds of raw agave were required to produce a single liter of mezcal for this batch. Crafted by maestro mezcalero Silverio García Luis as part of a 2023 Ancestral Limited Release, this expression revives a García family production tradition that had disappeared for nearly fifty years during the era when mezcal production was outlawed in Oaxaca. Deeply artisanal and profoundly limited, the mezcal delivers a layered, wild profile marked by savory smoke, earthy minerality, green herbs, roasted agave, and an intensely complex finish that reflects both the rarity of the agave and the heritage behind its production.
