At Ichinokura Sake Brewery, this philosophy begins at the source. Over 90% of their rice is cultivated within Miyagi Prefecture, nurtured through long-standing relationships with local farmers. Since 2004, their in-house Agriculture Department has deepened this commitment, championing sustainable practices while refining the quality of rice at its origin. This year, the experience moves beyond pairing into something far more intimate. For this edition, the brewer is brought to the table, dissolving the distance between creation and consumption. Each pour is no longer presented in isolation, but as part of a unified narrative, where the voices of brewer, sommelier, and chef converge. What unfolds is a rare closeness, an experience shaped not only by flavour, but by presence, dialogue, and shared understanding. Guided by Master Sake Sommelier Janice Chi and Seiji Nagai of Ichinokura Brewery, the evening presents a five-course progression exploring the nuanced character of sake across different rice varietals. Each expression is thoughtfully paired with Chef-owner Chi-san’s seasonal creations, composed to elevate the sake in quiet harmony. An experience of restraint and depth, where craft, ingredient, and intention are brought into singular focus. *Our pairing menu may feature seafood, beef, and pork.
