Carefully fermented in whole cherry before slow drying, the process amplifies vibrant tropical and stone fruit notes—layered with delicate florals and a silky, syrupy body. The result is a clean yet wildly complex profile, balancing juicy acidity with a lingering, honeyed finish that showcases both the varietal’s elegance and the precision of its fermentation. Biru Bekele is a dedicated coffee producer based in the Chito area of Guji, a region celebrated for its high elevations and intensely aromatic coffees. Working with smallholder farmers and carefully selected cherry, Biru focuses on meticulous processing methods that highlight Guji’s signature profile—vibrant florals, citrus, and layered fruit complexity. His coffees often reflect a balance of clarity and depth, shaped by the region’s rich soil, cool climate, and a commitment to quality at every stage from harvest to drying. Wush wush (or Wushwush) is a village in the Keffa region of Ethiopia, and also an heirloom variety of coffee (named for that village, of course). With Wush Wush gaining popularity in the specialty coffee world, farmers in other regions of Ethiopia have begun cultivating it, so not every wush wush comes from Keffa. And the bean is popular for a reason – it’s bright, sweet and super juicy!
