100% Muscat Ottonel grapes from Burgenland Austria, fermented and blended in Noitas Urban Winery in Fiskars, Finland. Open top fermentation with 4 days on skins. This MusCAT is dry, with some typical orange wine flavours such as mandarin, passion fruit, and flowery notes. During the winemaking volatile acidity contributes to freshness and structure into the wine. Perfect match with friends, sarcasm and boardgames. Behemoth is a shape-shifting giant demonic cat with a penchant for chess, vodka, pistols, and obnoxious sarcasm. Noita are an Epic Urban winery from Finland using only 100% hand harvested organic grapes from Austria. Low intervention, all natural, all delicious wines. They approach wine production with as much respect as the organic growers do. With as low an intervention as possible, they sort, crush, macerate and press the grapes and allow them to spontaneously ferment with their own native yeasts. In case you're interested, urban winemaking moves the production of wine into cooler climates and urban locations, whilst fostering prosperous relationships with grape growers. It also gives the winemakers enormous flexibility, allowing them to harvest grapes from multiple growers across France, Austria, Spain, Italy, Germany and many more wine-producing territories across Europe. We think that's kind of cool and means that there are endless possibilities to what wines will come in the future.
