BEAN DETAILS: ORIGIN: Buku Abel, Guji, Ethiopia ELEVATION: 2,100–2,300 masl VARIETY: Heirlooms PROCESS: Once cherries arrive at the station, they are placed in water for sorting and removing floaters. For the washed lot, cherries are then depulped, dry-fermented for 96 hours, and washed to remove the mucilage. The parchment is then laid out to dry on raised beds for 12-14 days. TASTING NOTES: palisade peach, drippy ripe melon, pluot, sparkling ROAST TYPE: Light Farm Level About the Coffee This lot comes from smallholder producers in Buku Abel, located in Ethiopia's Guji Zone at elevations between 2,100 and 2,300 meters above sea level. The Guji Oromo people have cultivated coffee across these highlands for generations. While Guji shares Ethiopia's famous floral character, the region has developed its own identity—producing coffees that are deeply aromatic, juicy, and fruit-driven while maintaining remarkable elegance. This season marks our first purchase from this family-owned washing station, although we've visited them on previous trips to Ethiopia. After cupping through dozens of offerings, Buku Abel stood out immediately as one of the most expressive coffees on the table. The Process Quality here begins with obsessive sorting. Upon delivery, freshly harvested cherries are floated in water to remove underripe fruit before being hand sorted once again. The cherries are then dried whole on raised beds for two to three weeks, during which workers continuously turn and sort the coffee by hand. That relentless attention to detail is what separates great Ethiopian naturals from merely good ones. Removing underripe cherries at every stage creates a remarkably uniform fermentation, allowing the coffee's fruit to shine without becoming heavy or boozy. The result is everything we love about a classic Guji natural—vivid fruit, sparkling aromatics, and incredible sweetness wrapped in a beautifully clean cup.
