The result is an unusual, savoury-tart vinegar with a green, gently herbal-bitter edge you won't find in ordinary fruit vinegars.Because it's unfiltered and unpasteurised, a living "mother" may form after opening and a little natural sediment can settle at the bottom — both are signs of a living vinegar, not spoilage.
