I am beyond grateful for the journey this chocolate shop is taking me on — I’m learning something new every single day. This creation came to life after I had the pleasure of meeting Ron and Michelle, the wonderful owners of Scotch Hill Truffle Farm in West Gippsland, Victoria. I was lucky enough to work with truffles picked the very same morning I made these chocolates. Each Truffle Chocolate is shaped to look and feel exactly like a real black truffle — in both size and texture, expect something that is a little bit bigger than the normal Bon Bon size. Inside you’ll find a powerful chocolate ganache infused with shaved black truffle for 36 hours, carefully seasoned with a Shiitake and Porcini stock reduction for a deep umami finish, and sealed with a delicate layer of hazelnut praline. Rich, earthy, aromatic, and profoundly comforting — this is winter at its most luxurious. Extremely limited production. Each box contains 6 chocolates.
