Meadowsweet brings almond and vanilla, fireweed contributes black tea character and tannin from its leaves and flowers, lemon balm from Linderud biodynamic farm in Oslo adds citrus freshness, and coriander seeds tie it together. All foraged by Villbrygg's network of Norwegian foragers during the short May–September season, dried and stored through winter for year-round production. A small amount of unrefined cane sugar is added as a base for fermentation — most of it is consumed by the lactic acid bacteria during the process. What remains (2.7g/l) is residual, not added sweetness. Full in flavour, dry rather than sweet. The non-alcoholic drink that actually holds up to food.
