The oily strip, the bones, the way it takes over whatever it lands on. Take the same Cantabrian anchovy, concentrate it, and set it into a pearl, and the objection disappears. Each pearl holds until you bite it, then releases a clean burst of savoury anchovy exactly where you placed it. A 100 g jar holds around 2,500 pearls. Spherified in Spain by Eurocaviar, who have been making this product since 1984.
