Nestled within the country's mist-covered central highlands, Cobán is renowned for its unique microclimate, fertile soils, and consistent rainfall. The region’s distinctive weather patterns create ideal growing conditions, allowing coffee to mature slowly and develop exceptional sweetness and complexity. The producers behind this lot are small family-run farmers who cultivate coffee on modest plots, often using techniques passed down through generations. Throughout the harvest, only the ripest cherries are selected before undergoing the traditional washed process. Following depulping, the coffee is carefully fermented, washed, and dried under closely monitored conditions to ensure clarity, consistency, and a clean expression of terroir. Every stage reflects the meticulous care and craftsmanship for which Cobán’s producers are known. The result is a beautifully balanced coffee that highlights the classic profile of Guatemalan washed coffees while offering an unexpectedly refreshing twist in the cup.
