Our latest special release from Wilton Benitez of Granja Paraiso 92 in Cauca, Colombia! Granja Paraiso 92 is a family farm that uses innovative techniques to produce exceptional award winning coffees. The farm grows exotic varieties and has its own processing plant, microbiology lab, and quality lab. This striped bourbon underwent a double anaerobic thermal shock process with koji, in which the cherries were first exposed to hot water to release their sugars before under going two separate anaerobic fermentations with unique cultures, including koji, Aspergillus oryzae, which is used in Japanese fermentation techniques such as sake brewing. The result is a complex coffee boasting floral and tropical fruit notes along with a layered silky texture that is dangerously smooth.
