It's lively, refreshing and gently sparkling with notes of fresh strawberries and cherries. This is a clean and non-funky style of Pét Nat that can be enjoyed by traditionalists and fans of natural wine alike. These grapes are picked ever-so-slightly underripe to promote refreshing acidity. Every grape is de-stemmed before fermentation, ensuring little to no tannin. Pair this simply with Pan con Tomate and good olive oil, or with a charcuterie board served with crusty olive bread. The winemakers themselves suggest pairing this with 'couchers de soleil' - with a picturesque sunset. This wine is non-vintage.
