An expertly processed Pink Bourbon that yields a fruity yet floral cup. Cherries are floated and hand-sorted to select only ripe fruit, then undergo a two-stage fermentation. First aerobic for 12 hours to develop fruity characteristics, followed by a week-long anaerobic process in sealed tanks. The coffee is then dried on raised beds for 5–6 weeks to reach optimal moisture, and finally rested in GrainPro bags before milling and export. Felipe Trujillo left his CEO career to revive his family’s coffee farm, La Ventola, blending tradition with innovation. Inspired by the wine industry, he mastered fermentation, transforming the farm into a hub for specialty coffee.
