Sunset - Colombia

Imagine lying in a field of wildflowers watching a pink and orange sky fade beyond the horizon. Now put that in a cup and you have Andres Cardona's Sunset. Andres is a coffee producer from Santa Barbara, Colombia, and one we always look forward to featuring on our menu. A true family man who dotes on his wife and daughter, he also happens to be a master of fermentation and coffee, having spent the last eight years honing his craft in specialty coffee. For Sunset, depulped cherries ferment in sealed tanks along with mosto, juice from coffee cherries. The result is a juicy, layered cup with cherry sweetness and floral complexity.
