Tasting Note: Fermented in traditional open fermenters, hand plunged and aged in small French oak barriques for 22 months. In the glass dark red with a crimson hue. Classic varietal nose showing leafy, briary notes along with cassis, plum and vanillin oak. The mid palate a perfect reflection of the bright aromas. Balance is a given and the flavour profile extends long and harmoniously with the well judged tannins providing shape and structure. Try with rosemary-infused and garlic slow-cooked lamb shoulder.
