It's been a while since we've had a pure Pink Bourbon on the menu. Erick Bravo's second lot from Finca El Chaferote is how we beat the drought. Pink Bourbon is a Colombia-native variety, named for the soft pink blush of its cherries. It's known for producing some of the cleanest, most articulate cups in the country. When grown well and handled carefully, it sings. This lot sings. Hand-picked at Finca El Chaferote in San Agustín, Huila, then depulped, washed clean, and dried slowly. Fully washed, start to finish. The processing is textbook clean. In the cup we're getting ruby red, peach, and soft honeysuckle. Bright without being sharp. A clean cup with sweet florals. A fabulous presentation of what Pink Bourbon can do when everything lines up. This one landed on the cupping table less than a week ago and it's already one of the best cups on the counter.
