Our Reserva Bone-In Ribeye is the centerpiece cut of the program: a generously marbled, bone-in ribeye from cattle raised a minimum of 60 months on Australian pasture. Its size and marbling make it the ideal showpiece for a dinner party or special occasion. Reverse sear for the best crust-to-center doneness ratio, then rest before carving tableside. Raised on pasture in Victoria and Tasmania, this grass-fed program grazes cattle three times past conventional slaughter age, developing natural marbling and a deep crimson hue rare in grass-fed beef.
