This cake was too good to keep to the café counter. Our Cardamom, Olive Oil & Pistachio Cake was such a hit with our trade customers, we made a smaller version for you to enjoy at home. A soft, fragrant cake made with blitzed pistachios, gently spiced with freshly ground cardamom and extra virgin olive oil. Finished with a whipped cream, cream cheese and yoghurt icing, then topped with chopped pistachios. Rich without being heavy, a little bit unusual without getting weird, and very good with coffee.
