This "sweet heat bombshell" of fermented samba takes garlic and chillies covered in lactose-fermented honey, (left over from the Hot Fermented Honey), blended to make a smooth consistence, adding a pinch of salt and apple cider vinegar to give you a perfectly balanced sambar with a serious kick. Perfect on eggs, curries, a taste in a sandwich or toast, rice bowls, mixed in to marinades or combine with a few tablespoons of buttermilk to make an unreal friend chicken brine.
