Girolamo Russo has been led by Giuseppe Russo since 2004, when he took over the estate following his father Girolamo's death, and the winery is now certified organic. The San Lorenzo bottling is made mostly of Nerello Mascalese with a little Nerello Cappuccio grown in the contrada of San Lorenzo near Randazzo, at between 750 and 780 meters above sea level. The vines were planted by massal selection between the 1920s and the 1950s; grapes are hand-picked in late October, mostly de-stemmed, crushed, and fermented using indigenous yeasts, macerated on the skins for about fifteen days, then aged in used 2,600L barrels for about eighteen months before bottling.
