Tech Location: San Benito County, California Alcohol: 13.2% Tasting Notes Pomegranate, strawberry preserve, black plum, fresh mission fig, porcini, violets. Winemaking Hand-harvested and foot-stomped then fermented with native yeast using 95% whole clusters. Aged on fine lees in neutral barriques for 11 months. Bottled unfined and unfiltered. Vineyard Stiletto Estate is located in San Benito County and sits on gravelly loam substrate soils with clay and limestone. Vineyard is farmed using organic methods, with vines aging 25+ years.
