The evening starts light with kombu-cured hirame, then ease into the quiet depth of sous vide abalone before things pick up with crisp-fried Wagyu, that first real hit of richness. The highlight, at least for us, is the Akune Gold A5 Wagyu ribeye: deeply indulgent, and exactly the kind of dish that makes Faiveley’s Pinot Noirs come alive, whether it’s the brighter, lifted styles or the more structured, layered bottles. It finishes with a matcha fondant, just enough sweetness to close the night without overdoing it. The kind of dinner that just flows.
