Ayocote Beans — Frijol Ayocote
Mixed-color ayocotes grown in Ixtenco, Tlaxcala by Angoa García and the seasonal growers of the community, sown in spring and harvested in autumn on rainfall alone. Ayocote is a different species from the everyday frijol — a runner bean, much larger, and it cooks into something closer to a stew than a side. Lush, meaty and buttery, with a dense broth. Traditionally simmered slowly with aromatic herbs and lard, folded into tlacoyos with hoja de aguacate, cooked with dried fish, or turned into atole agrio. Ayocote landrace · 21.1% protein · dense broth Ixtenco, Tlaxcala · 100% rainfed · 1 lb
