Colombia Diviso Sidra
Origin 10. Finca El Diviso, Huila. Sidra, grown by Néstor Lasso at 1,850 metres near Pitalito. A variety usually traced to Ecuador, whose parentage is still argued over. Washed, then given a thermal shock: a rinse in hot water at the end of fermentation, which the farm uses to hold on to aromatics before the coffee dries. Roasted light. Pomegranate and apricot at the front, lavender on the finish, caramel underneath. The third variety we carry from El Diviso, alongside the Gesha and the Landrace. Same land, same family, a different seed. The farm grows without synthetic pesticides, herbicides or fertilisers, by its own account. No organic certificate. Some of our coffees carry a published laboratory report. This lot is not one of them, and is not scheduled to be. Single farm. Single variety. 2025 harvest. 100g whole bean. Brew on filter or immersion. What we test for, and why.
