ANALYSIS Alcohol 12% alc/vol pH 3.5 Acid 6.02 g/L Closure Stelvin Bottling Date December 2024 Cellaring 5-8 years VINIFICATION Made from handpicked fruit grown in a single vineyard. Fermented naturally in small batches, with a portion of whole bunch and whole berries to build texture and complexity. Matured for 8 months in older French oak barrels, allowing the fruit and spice characters to shine without heavy oak influence.
