2021 Morrison Shiraz Cabernet

Place This wine comes from a combination of two vineyard parcels from the famed sub-region of Watervale, Clare Valley. Vintage Conditions A dry cool autumn in 2020 led into good winter rains. Above average spring showers rainfall gave way to a very cool, dry summer. These conditions slowed the grapes ripening, resulting in an abundance of flavour and excellent natural acid. Overall conditions were reminiscent of those seen a decade ago, ideal for the variety, making it a rare vintage where quantity is generous, and quality exceptional. Winemaking The Shiraz is sourced from the Morrison vineyard and the Cabernet is grown on the opposite ridge. These parcels were vinified separately in open fermenters, before being carefully basket pressed into new and seasoned French oak barrels for 14 months.
