Union Sacré Cabernet Sauvignon, 2025, Paso Robles, California, US
Region California Country US Type Red Grape Cabernet Sauvignon Style Juicy, herbal, structured ABV 12.9% Closure Screwcap Method Sustainable A French chef turned winemaker, a Californian Cabernet and a rather refreshing approach to a classic grape. Some wines don't need to raise their voice to make an impression. About the wine Some Cabernets like to make a grand entrance. This one would rather pull up a chair, pour a glass and get to know you. And this Cabernet Sauvignon fits rather nicely into that story. Cabernet Sauvignon might be famous for its powerful, oak-heavy California expressions, but Xavier takes a different direction, putting freshness and fruit ahead of sheer muscle. Tasting notes Juicy cherries, dark herbs and cocoa, with a refreshing touch of mint. Youthful and firmly structured, with lively acidity and a savoury character that makes it particularly interesting alongside food. Food pairing Rosemary lamb chops, grilled ribeye, slow-cooked beef ragù or a juicy cheeseburger. The herbal notes also work beautifully with mushroom dishes, while aged Cheddar and a few slices of charcuterie make an excellent excuse to open a bottle. About the winemaker Behind the bottle is Xavier Arnaudin, a Frenchman who originally trained as a chef before falling for wine during his sommelier studies. He swapped the kitchen for the cellar, moved to California in 1999 and met his future business partner, Phillip Muzzy, in 2003. Years later, their shared obsession with Alsatian wines led them to create Union Sacré in 2014. A French chef turned winemaker, an American friendship and a little piece of Alsace in California. Quite a recipe.
