The 15cm wide boning knife is the stiff partner for trimming and working close to bone, where a flexible blade bends away from you. It's semi-stiff rather than rigid, so it still trims beef, lamb and pork and the kit isn't stuck on fish. The 30cm regular-cut honing steel brings both edges back between jobs, which is what stops a filleting knife dragging instead of slicing. Both knives are Swiss-made Victorinox Fibrox: stainless steel blades, textured handles that keep grip with wet hands. Hand wash only and dry them straight away, especially after saltwater.
