Region Tarrazú Producer Jose Enrique Romero Chacón Farm Finca Don Joaquin Varietal Milenio Altitude 2500 masl Harvest 2025 Process Lactic Fermentation Washed layered and fruit-bright, with peach sweetness at the centre. grape and green apple bring juicy lift and crisp acidity, softening into vanilla, cacao nibs, and brown sugar. expressive, creamy, and complex, with a refined lactic-fermentation depth. process ripe Milenio cherries were harvested at optimal maturity, above 24° Brix, then partially sterilised to reduce the natural microbial load. the coffee was placed in fermentation tanks with a selected culture of lactic acid bacteria, isolated from coffee itself, encouraging the conversion of natural sugars into lactic acid. finished as a washed process, this method balances vibrant acidity, complexity, and the clean character of the Milenio variety. producer Tributos del Ota is led by Jose Enrique Romero Chacón and his family at Finca Don Joaquin in Costa Rica’s Dota valley. the micromill began in 2017, building on more than 40 years of family farming experience, with each family member contributing to cherry quality, processing, and long-term improvements in sustainability, innovation, and specialty coffee production.
