Zarza
This is a very exciting coffee and a perfect companion to welcome in the Spring season. Pink Bourbon is a variety that is prized in the specialty coffee community for its East-African-like sweetness and wonderfully crisp acidity. The name comes from the fact that it ripens to a Pinkish color rather than the usual Red, Yellow or Orange. They're tricky to grow because the Pink variety is a recessive gene and has to be carefully isolated from more dominant bourbon trees to avoid the plant reverting to its red or yellow variety via cross-pollination. This particular lot is a natural process meaning the coffee has been dried with the entire cherry attached. Naturals are known for bigger texture and loud fruitiness but as this lot is a Pink Bourbon we're getting much cleaner tropical fruits with a floral blueberry finish.
