A shiboridashi is a type of handleless Japanese teapot with a shallow, open shape. Tea is poured by slightly shifting the lid to hold back the leaves while allowing the liquor to flow out. Its wide form gives the tea leaves plenty of room to unfurl, making it particularly well suited to gyokuro and high-grade sencha, which are often brewed slowly with a small amount of water to draw out their natural umami.
