Third-generation producer Julio César Madrid Tisnés once ran it as a conventional farm growing washed Castillo and Caturra. Today it is the group's innovation plot — the place where new processes are tested before they reach the rest of the alliance, and where more than twenty varieties grow across the wider estate. What 'Culturing' Actually Means Culturing inoculates the cherry with a starter culture of yeasts and bacteria isolated from the farm's own trees, fed with an energy substrate built from local fruit. The lot ferments under restricted oxygen before it is washed and sun-dried. The 'NG' — New Generation — designation adds a controlled nitrogen co-fermentation on top.
