Process Aguila 4 NC was harvested on February 16th, 2026 from the Aguila lot in Hacienda La Esmeralda’s El Velo Farm. After harvest, the cherries were dried for 44 days on raised beds in a climate - controlled drying room. An indoor facility with constant airflow and precise temperature and humidity control.
