Chorizo, Pea & Saffron Risotto

This risotto has a bit of an identity crisis. On one hand, it has been made with Arborio rice cooked slowly in chicken stock. Sounds pretty Italian so far right? But then we flavoured the risotto with, among other things, smoked paprika, saffron & chorizo sausage. Starting to sound a little bit more Spanish now isn't it? Our risotto may be a little confused but is very delicious!
