Prestige Kiritsuke Spectre Set: the knife, its care and your safety This set brings together the Kiritsuke from the Kaitsuko Prestige Collection and the two accessories that accompany it in everyday use: a honing steel to maintain the edge and a stainless steel finger guard to guide the blade safely. You choose the handle of your Spectre from six colour variants — the blade remains the same. What's in the Set 1 Kiritsuke Spectre: 21.5 cm blade in 10CR15CoMoV steel, 58–60 HRC, 67-layer Damascus in San Mai construction, sharpened at 15° per side. Handle in stabilised wood and epoxy resin, in the colour of your choice. 1 honing steel: 20 cm stainless steel rod, ergonomic handle. A few light strokes are enough to realign the edge between sharpenings. 1 stainless steel 304 finger guard: 6.5 x 4.5 cm, adjustable ring, for right- and left-handed users. It secures the hand and acts as a guide for even julienne and brunoise cuts. Choose Your Spectre Spectre I: bright red resin and wood in brown tones. The warmest and most vibrant. Spectre II: light wood on the blade side, white resin on the pommel side. The brightest, offering the strongest contrast with the Damascus. Spectre III: black resin and beige wood. The most understated. Spectre IV: exotic green and beige wood set in resin. The most organic and artistic. Spectre V: deep red resin, almost burgundy, on light wood. The most saturated. Spectre VI: deep blue resin on light wood. The freshest — a nod to the ocean against the Damascus. The wood is deeply impregnated to resist moisture, the resin locks the handle structure in place and the grip does not slip, even with wet hands. The grain and tones vary from piece to piece: no two Spectres of the same colour are ever identical. Why a Kiritsuke? Long blade, rectilinear profile and angular "K-Tip" point: the Kiritsuke combines the length of the Yanagiba (fish) and the straight edge of the Usuba (vegetables). It fillets and slices sashimi in a single stroke, chops herbs flat on the board and glides through boneless meat. Traditionally reserved for the head chef in Japanese kitchens, the Spectre adopts a symmetrical double bevel and a Western-style handle: it suits both right- and left-handed users. At 58–60 HRC, its steel holds the edge far longer than the Chef Tanaka range (53–54 HRC), but it does not forgive twisting or impact against bones. The finger guard included in the set helps maintain a consistent technique from the very first cuts.
