Food safety: Ensure the internal temperature of your protein stays above 140°F (60°C) for food safety.  Residual Smell: Smoke and grease can leave a lingering scent and oil residue in soft cooler liners. Using a "sacrificial" towel or an open plastic bag inside the towels can help catch leaks and odors.  Bark Integrity: While coolers are great for tenderness, the trapped steam can sometimes soften the brisket's "bark."
