Terra marks the brewery’s first attempt at Assemblage—blending multiple vintages and styles developed since their 2021 revival. The composition centers on three premium Nagano rice varieties—Kinmon Nishiki, Yamakei Nishiki, and Miyama Nishiki—and notably incorporates the rare “Batch 001” aged sake, adding a quiet layer of maturity and depth. On the palate, it opens with a rounded, silky texture, carrying delicate notes of yogurt, white peach, and soft lactic nuance. There is a gentle lift—almost a whisper of micro-effervescence—paired with an elegant acidity reminiscent of fine white wine. Rather than an immediate burst, the flavor unfolds gradually, revealing a calm yet complex umami shaped by aging.
