COFFEE DETAILS: Producer: Oro Molido Farm: Vista de Nieve Region: Sierra Nevada Mountains Northern Colombia Elevation: 1400-1600masl Varieties: Castillo and Colombia Certifications: Rain Forest Alliance Processing: Red Honey Process - Hand picked, fermented for 12 hours, dried for 15 days Roast level: Medium/light WE TASTE: Chocolate, Sugar Cane, Vanilla and Dragon Fruit. PROCESS: This delightful coffee, of Castillo and Colombia varietals, is processed with a YELLOW HONEY method. Honey processes remove the skin of the cherry, leaving varying levels of the fruit on the bean while it dries, which imparts more sweetness and fruitier notes. (White, yellow, red, and black honey processes leave less and more fruit/mucilage on the bean during drying.) This coffee dried for 10 days before heading to the dry mill. Grown by our friends at Oro Molido in the Santa Marta region of Colombia, at Finca Vista De Nieves, at 1750 masl. ORIGIN & SOURCING: We've been working with Oro Molido since 2015. They are multigenerational coffee producers with farms (fincas) in several regions in Colombia. Finca La Sierra is in Northern Colombia in the Antioquia Region.
