The Ethiopia Gatta Anaerobic Natural is a highly celebrated Microlot coffee sourced from the renowned Gatta Fram, operated by Daye Bensa Coffee in the Sideman Bensa region of Ethiopia. Ripe red cherries are tightly sealed into airtight containers. The fruit ferments in an oxygen-free environment for 48 to 100 hours. This builds internal pressure, forcing intense fruit juices and sugars deeper into the seed. The whole cherries are transferred onto raised African beds to sun-dry naturally.
