Cape Byron Distillery The Original Australian Single Malt Whisky

A joint creation by one of Scotland's most revered distillers, Jim McEwan, together with Eddie Brook, taking a distinctively Australian touch on a classic Scottish-styled single malt. Maturing in larger 200-300L ex-Buffalo Trace Bourbon barrels allows the fruit profile of the new make spirit to never feel dominated by oak, while a uniquely maritime feel comes through in the final product, influenced, of course, by Byron Bay's proximity to the sea. Despite its nod to classic Scottish single malts, the palate shows something purely Australian. Tropical notes of pineapple and mango mix with peaches, while a creamy vanilla touch from the ex-Bourbon casks brings roundness and body, with just a lick of saline on the finish. It's safe to say that this whisky is raising the benchmark for Aussie whiskies!
