Sui Lieviti 2022 – Orsi SanVito
A great biodynamic “Pet Nat” produced with Pignoletto grapes, a blend of the tradition of the Bolognese Hills. Federico Orsi proposes a wine that has always accompanied the Emilian and Bolognese gastronomy without filtration or clarification. It ferments with its own indigenous yeasts in concrete containers, and referments with the arrival of the first spring heat until all sugars are consumed. The wine, not being foul, keeps all the yeasts inside the bottle and is therefore cloudy. The manufacturer suggests turning the bottle upside down before opening to bring the yeast back into suspension. Vinification Wine refermented in the bottle without filtration or clarification. Pairing Aperitifs, mise en bouche, cold cuts and fried squid.
