Crozier Blue
Ireland's only sheep's milk blue, made by the Grubb family using milk from a Friesland flock grazing the limestone pastures of Tipperary. Where Cashel Blue is gentle and buttery, Crozier is richer and more complex — sweet and salty with nutty overtones, a peppery kick from the blue, and a lush, creamy texture that deepens beautifully with age. The closest thing to Roquefort made on this side of the Atlantic. Wonderful with honey, pears, or a glass of Sauternes.
