Edge Angle: Honed to 12–14° per side. This gives you a noticeably cleaner slice with less drag compared to standard 20° western knives. Steel Hardness: High-carbon Damascus with targeted heat treatment. It holds its edge longer, so you’re not reaching for the honing rod every 15 minutes. Corrosion Resistance: The folded layers include nickel and chromium alloys. It’s resistant to rust, but like any high-carbon steel, we still recommend hand-washing and drying. The Handle: Function Over Fad. We chose stabilized wood for a reason. It’s been impregnated with resin under pressure, so it won’t crack, swell, or absorb moisture over time. The shape is ergonomic, but more importantly, it gives you a neutral, comfortable grip—whether you have large hands or small. A few practical notes: The Damascus pattern is unique to each blade.
