The Oracle

We brewed this Braggot, an ancient style of beer that's basically if mead and beer had a baby with Celtic roots, in collaboration with instrumental post-rock duo, Nordic Giants, as part of our band collaboration series for August. We layered the mash down on a bed of Spruce and Juniper branches, nodding to the Finnish sahti style of brewing. We then enriched the beer with plenty of Scottish heather honey and added even more juniper berries and spruce tips in the kettle and primary fermentation. The finished result is a sweet, subtle, spicy, but ultimately refreshing pale ale, sitting at a sessionable 4.0%. Check out Nordic Giants' music below!
