In 1994 Bettina Bürklin-von Guradze walked away from Germany's system for ranking wine. The 1971 law graded quality by sugar content in the grape, which told a buyer nothing about where the wine came from. She rebuilt the estate on the Burgundian model instead, sorting everything into estate, village, Premier Cru, and Grand Cru. Then she found the 1828 Royal Bavarian land tax map, drawn to assess vineyards for taxation, and discovered her rankings matched it almost exactly. Her neighbors copied her, and the VDP classification that now governs German fine wine started here. Bernhard Bürklin founded this estate in 1597 as the town clerk and later mayor of Wachenheim. It is now the largest family-owned wine estate in Germany at 86 hectares, and in 2005 it became the first German producer certified biodynamic by Biodyvin, the same body that certifies Domaine Leflaive. This is the village bottling, drawn from Bürklin-Wolf's unclassified sites around Wachenheim on clay, limestone, loam, and sand. It is the wine that shows you the house style without the cru price. Expect green apple, lemon, and quince over wet chalk, with a lean, taut palate and a long saline finish. It is starker and leaner than the Premier Cru wines above it, which is exactly the point.
