Having honed his pinot-making skills at Bannockburn and Clyde Park, James Thomas is now making his own outstanding pinot noirs. 30% whole bunches. A medium, bright ruby red. With its aromas of pure red fruits, floral scents, allspice and a hint of autumn leaves, this soars effortlessly from the glass. The palate is medium bodied, with pitch-perfect silky and persistent tannins and bright acidity. Finishes mineral and long. Varieties: Pinot Noir (MV6 and Abel clones) Harvest date: 13th and 14th of March 2024 Yield: 0.85kg per vine / 1 tonne per acre Fermented: Fermented with wild yeast and 20% as whole bunches Maturation: 10 months in French oak 15% new Alcohol: 12.6% Bottling date: Feb 2025; bottled without fining. Production: 170 cases.
