Sourced directly from Liliana Caballero at Hacienda Casablanca in the Santander highlands, this is genuine direct trade: transparent, traceable, and built on a relationship with the farmer. Grown at 1,550 metres above sea level and processed through Natural Anaerobic Fermentation, the beans undergo a slow, oxygen-free fermentation that amplifies their natural sugars and unlocks extraordinary complexity. The result is a vibrant, fruit-forward cup with tropical fruit notes, blackberry, and cacao — exotic, expressive, and deeply satisfying from the first sip to the finish. Harvested between October and January, this coffee captures the best of the Santander season. Our Omni-Roast (Medium) profile is carefully developed to honour the variety's character across all brew methods — espresso, filter, or plunger.
