Farmers hand-pick ripe cherries, which are rinsed, sorted, pulped, and fermented for 8–12 hours. The coffee is then sun-dried on raised beds for 10–15 days until it reaches 10–11% moisture content. Rwanda Trading Company, the owner of this washing station, is heavily involved with the producers who deliver cherry to Gitwe, distributing over sixty thousand coffee and shade tree seedlings to help them rejuvenate their farms and deal with climate change.
