The Bee Every Laguiole en Aubrac knife carries the bee — but on a Belle Pièce, the bee is no longer an emblem carved into the spring. It is lifted free of it: shaped, filed, and engraved as its own small sculpture. Look closely and you'll find the wings carry their own fine line work, the body, its own texture, each stroke placed by a single artisan working from memory and instinct rather than a template. This is the distinction that separates a Belle Pièce from the rest of the range. Where our other high-end knives feature a hand-chiselled bee in relief, the Belle Pièce bee is fully dimensional — a standalone piece of metalwork in miniature, requiring hours of additional, uninterrupted focus from one of our most senior cutlers. The same exacting hand carries through to the handle and spring, where grain, bone, or burl is worked to let the material's own character lead the design. The Droit Silhouette What sets the Laguiole Droit apart is its locking mechanism — a lockback, also called a back-lock. Positioned just ahead of the blade, right before the spring, is a small metal stud that cutlers call the "fly." Lifting this fly with a fingertip releases the lock, allowing the blade to swing freely and fold back into the handle. The name "Droit" — French for straight — comes directly from the knife's profile: the blade and handle run along one continuous line, without the curve found on the Layole. Two distinguishing touches round out the design: a "corbin beak" shape at the base of the handle, and a "Bourbonnaise" blade with a rounded tip where its straight spine and edge taper together to a point. Handle This handle is crafted from carbon fiber inlaid with gold — a modern composite where fine gold flakes are suspended within the carbon fiber matrix, creating a striking marbled pattern that shifts and catches the light with every angle.
